
Thai green curry paste is used to make Thai green curry. You can buy commercial Thai green curry paste or make your own. Recipes may contain a number of variations, but most will include fresh green chillies, shallots, galangal, garlic, lemongrass, kaffir lime leaves, and Thai sweet basil. These ingredients are now commonly available in large supermarkets and specialist Asian stores. The recipe is sufficient for two curries.

Thai Green Curry Paste
3 large Serrano Chillies
6 cloves of Garlic, peeled and chopped
2 large pieces of Galangal, peeled and chopped
1 large handful Thai Basil, roughly chopped
2 large Banana Shallots, peeled and slice
4 stalks Lemongrass, peeled and sliced
1 Lime, juice and zest
2 teaspoons Thai Fish Sauce
1 heaped teaspoon Palm Sugar
Vegetable oil
Combine the chilies, garlic, galangal, Thai basil, shallots, and lemongrass into a food processor. Use the pulse setting to finely chop then the add the lime zest and juice, and sugar. Pulse the mixture again with a drizzle of oil until a thick paste starts to form. Use the fresh green curry paste immediately or store it in an airtight container in your refrigerator for up to one week.
